SOILS
Characterized by high salinity, with up to 40% clay and limestone rocks.
VINIFICATION
The must is cold-settled for about two days and then spontaneously fermented in 300-liter amphorae, where it remains for the entire aging process. It does not undergo clarification or filtration.
TASTING
It has bright antique pink color. On the nose, it is rich in strawberries and cherries, light spices, clearly floral components, blueberries, and even a subtle hint of tomato fragrance. On the palate, it is fruity, sweet, and elegant, spreading pleasantly across the tongue, with vibrant acidity and smooth fruit.
PAIRINGS
Perfect with fish dishes such as crusted salmon, fried squid, fish or meat carpaccio, and niçoise salad.
